Rice Dressing (Dirty Rice)

This is one of our favorite rice dressing (also known as dirty rice) recipes. Add this to a meatball stew and talk about good!

Ingredients

  • 1 pound ground pork
  • 1 pound ground beef
  • 2 cups rice, raw and rinsed
  • 1 can beef broth
  • 1 pound Baudin’s dressing mix
  • 1 cup celery, finely chopped
  • 1 cup bell pepper, finely chopped
  • 1 tbsp minced garlic
  • 1 small can liver (liver spread or pâté)
  • 1 tbsp Tony Chachere’s seasoning
  • 1 tsp sugar
  • Salt & pepper to taste
  • 2 1/2 cups water
  • 1 tbsp oil
  • 1 tsp onion & garlic powder (optional)
  • 1/2 tsp MSG (optional)
  • 1 tbsp roux (optional)

Directions

  1. Heat up a large pot over medium heat. Pour in the 1 tablespoon of oil.
  2. Season the ground pork and ground beef with Tony Chachere’s, sugar, salt and pepper. If using the optional onion & garlic powder and MSG, add them now as well. Mix well and add the meat to the heated pot.
  3. Stir occasionally until the meat is browned. Then add in all the chopped vegetables (garlic, celery, bell pepper, and onion if using). Let the vegetables cook down for 5 minutes.
  4. Add in the small can of liver. (You may be tempted to skip this step, but this is the secret ingredient that makes this dish so good.)
  5. If you have pre-made roux handy, add 1 tablespoon. If not, you can skip it. Stir well.
  6. After 2 minutes, add the can of beef broth and 2 1/2 cups of water. Stir again.
  7. Cover and let boil for 5 to 7 minutes. Taste the liquid to see if it needs more salt and/or pepper.
  8. Add in the raw, rinsed rice. Stir evenly, then cover. Reduce to a lower heat and simmer for 15 minutes. Do not stir while it simmers, but make sure it doesn’t run out of water and burn.
  9. After 15 minutes, check the rice to make sure it is cooked. If needed, give it a few more minutes.
  10. When the rice is done, turn off the stove and let the pot sit uncovered for 5 minutes.
  11. Before serving, gently fold or stir the rice. Serve as a side dish or a main dish if you really love it.

Notes

Any canned liver product (spread or pâté) works well. Look for it at a larger grocery chain or at a specialty market, such as an Asian market.
