1st Generation: Edward & Leona Baudin

The journey began with Edward and Leona Baudin, who first made their mark in Breaux Bridge, Louisiana, running Baudin’s Supermarket. Their passion for Cajun food led them to open Baudin’s Sausage Kitchen in St. Martinville, where they spent countless long nights experimenting with recipes. 2nd Generation: Tonie Papadakes

When Edward and Leona retired, their daughter Tonie Papadakes stepped in to lead the plant. With her dedication and vision, Tonie expanded the business while staying true to her parents’ recipes. Under her leadership, Baudin’s Sausage Kitchen grew into a thriving operation, beloved for its consistency and authenticity. 3rd Generation: Ethan Papadakes

Today, the legacy continues with Tonie’s son, Ethan Papadakes, who represents the third generation of Baudin family leadership.
